 You got it-- another culinary experiment. This swampy looking dip sort of looks like goo taken right out of the forest, (giving credit to cream cheese), but it makes a really tasty dip for nachos, and I ended up having a little party.
At the time I had bought a recipe book that was on sale big time, which consisted I had a bunch of recipes using cream cheese. There was a recipe for a nacho dip but I didn't have nor felt like buying all the ingredients, (which, by the way, would cost way too much for a "simple" recipe), so I had to modify the recipe BIG TIME.
I had the nachos, the cream cheese and a few different ingredients left in the fridge which were nacho salsa cheese dip, lettuce, and tomatoes. I wanted to keep it healthy and not overload it with cream cheese and nacho cheese, (because that's just asking for a heart attack), so I decided to make lettuce the dominant ingredient. I chopped up a bunch of lettuce to fill up a small bowl, mixed in some diced tomatoes, a table spoon or two of soften cream cheese, poured in a little nacho cheese sauce to make the consistency creamier, then mixed gently with a fork. It's going to stick all over the place to whatever lettuce it touches, and look weird but keep mixing to spread/coat the lettuce evenly with the cheese, then everything should be somewhat fluffy like a hair perm. Then enjoy with nachos, as my friends did!
You can dip a big wad of lettuce mixture with the nachos, since it's pretty light. It has a salsa-y flavorful taste to it and it doesn't taste like you're biting into a lettuce. Enjoy snacking!
