![]() Looks kind of nasty, but is pretty tasty. Experimental dessert copying the Thai style Mango Sweet Rice dessert I've eaten in the restaurants. Not sure why people call regular white Asian rice "sticky rice" because all rice seems to be a little sticky, but sweet rice is a different kind of rice that is actually naturally really really sticky and sweet.
You can purchase sweet rice in Asian stores. Uncooked, they look opaque white in comparison to regular rice which is somewhat clearish/transparent. To prepare sweet rice, some people rinse it before cooking. You can cook it in a regular rice cooker, but instead of 2 parts water 1 part rice, you use 1 part water, 1 part rice. (For every 1 cup of rice, use 1 cup of water). So in a regular rice cooker, just fill up with half of the water you would have use. Coconut milk and condensed milk can be found in a can in American stores as well. Coconut milk looks white as milk, is not sweet, just coconutty, liquidy like milk, and needs to be boiled. It is also used for accenting flavors of soups, and flavoring of desserts. Condensed milk is very thick, manilla in color, very sweet like milk candy, and doesn't need to be boiled. I am not sure if there's lactose in condensed milk; I am lactose intolerant against liquidy milk products, but don't have a problem with these products. Surprisingly, some people have never or rarely had mangos. That tropical fruit can be found in American stores as well. Wait until it's soft, juicy and ripe, before preparing, slicing it, otherwise, the fruit is sour and bitter. Left over fruit on the core, (which is often difficult to cut off completely) can be eaten and chewed off the core. When the sweet rice and coconut milk is cooked and the mangos are sliced. Mix some of the coconut milk in the rice. Then top the rice with mangos. You can also optionally mix some coconut milk in with the condensed milk, and drizzle on top of the mango and rice or drizzle separately. The condensed milk gives an extra sweet milky flavor. Enjoy!
