Sushi minis looking mutilated

Another bizarre food experiment gone weird.. but very tasty.

I'm no raw fish preparer, nor do I want to risk preparing raw sushi; so I used smoked salmon, specifically the a smoked nova.  I created my own recipe and didn't use Japanese sushi rice.  I used a combination of regular Asian rice and sweet rice, (possibly known as "sticky rice"), which is a different type of rice that is naturally sticky/sweet.

This is also a great way to save money and eat in, and is very inexpensive. The best deal I found was an 8 oz package of smoked nova salmon at Trader Joe's for about $5 (compared to $13 for other kinds).  At an Asian store, would sell large seaweed sheets $1.25 per package (8 sheets), sweet rice and regular rice much cheaper than an American store.  Rice used to be about $10 per 20-25lb bag before the rice shortage.  I think it's now $25.

In a small rice cooker, I poured 2 cups of sweet rice, 1 cup of regular rice, and filled up water until it hit the 2 cup line, (because it's 1 cup water to 1 cup sweet rice and 2 cup water per 1 cup regular rice).  After that is done, I drizzle a little rice vinegar and mix in some concentrated cooking soy sauce (Maggi), or if you prefer, leave that out and eat with dipping soy sauce.  Split the big sea weed sheet in half to a rectangle, spread the rice, thin layer of smoked salmon, roll tight, cut... and you got an instant appetizer or meal!  To make it less mutilated, I dipped my knife in water and sliced really quickly about 1 inch thick.  This makes a large plate with 2 layers and I heard actually fills people up due to the denseness of sweet rice.  Enjoy!
