Laying in bed before falling asleep, I had a mad pizza craving 2am, then planned on how I could obtain pizza this week or make it. I figured it would be more affordable and customizable to make it.. I then used my imagination to put together ingredients for a pizza. Fell asleep. Woke up & was on a pizza mission.
Went to the store, bought pizza dough. The rest of the ingredients were at home. The potatoes for the mashed potatoes take the longest, so I cooked water to a boil, threw in about 4 medium potatoes in (after washing it of course). While I cooked the potatoes (for 30m or until soft, check with fork), I prepared the rest of the pizza. I recommend also preparing the dough by rolling it out on an oiled (or cooking sprayed) foil on rectangular baking pan like in the picture and precooking it according to the directions. Cooking until 5 minutes before done, at 350-375 degrees depending on oven, how thin the pizza dough is, and level the sheet was placed.
I wanted flavorful mashed potatoes, but keeping it healthy. So I used a portion of instant 100% real potatoes (the one where you add boiled water).. probably about 1-2 cups prepared, since those have A LOT of sodium. When the whole potatoes, were done, I mashed them, seasoned with onion powder, minced basil, garlic powder (or whatever flavors would be consistent with your choice of instant mashed potatoes, if you decide to use that also).
For shrimp, I used cooked shrimp (although you can prepare raw shrimp). I sauteed with fresh chopped garlic and shrimp, (shrimp juice will comeout). When warm enough, I warmed up some alfredo sauce (it comes in low fat too), mixing in with the shrimp, so the shrimp juice will make the sauce more flavorful. I seasoned with basil. If you like spicy, add black pepper.
When the dough is almost cooked spread a portion of the dough with pizza/tomato pasta sauce. Season with basil, and layer with strips of string cheese. Scoop mashed potatoes on a portion of the pizza dough, to your liking. Then scoop alfredo sauce on the last potion of the pizza, topping it off evenly with shrimp. Pop dough back into the oven until each portion is warm enough. The potato portion would looked baked, a little crusty, the cheese is melted, sauce a cooked and flavorful tarty taste, and the shrimp a little roasted. Be careful not to burn the ingredients. Mine came out really tasty.
What's great about this is it seems much healthier than the super dripping greasy pizza you get at some places. The cheese you can use may be more wholesome, especially if you use fresh mozzarella (but strips of string cheese is comparable) . The dough you get in the store has very little fat, if you're concerned and alfredo sauce comes in low fat too. The pizza itself also tastes really fresh. Enjoy your pizza!
